- 1 tsp garam masala
- ½ tsp black pepper powder
- 1 tsp salt

For the Rice:
- 2 cups basmati rice (soaked for 30 minutes)
- 4 cups water
- 2-3 cloves
- 2-3 green cardamoms
- 1 bay leaf
- 1-inch cinnamon stick
- 1 tsp salt
For the Biryani Masala:
- 2 tbsp oil or ghee
- 2 large onions (thinly sliced)
- 2 tomatoes (chopped)
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- ½ tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- ½ tsp coriander powder
- ½ cup chopped cilantro (coriander leaves)
- ½ cup mint leaves
- ½ cup warm milk with a pinch of saffron
- 2 tbsp fried onions (for garnish)
Instructions:
Step 1: Marinate the Chicken
In a bowl, mix the chicken with yogurt, ginger-garlic paste, turmeric, chili powder, garam masala, black pepper, salt, and lemon juice. Cover and refrigerate for at least 1 hour (preferably overnight) for deeper flavors.
Step 2: Cook the Rice
In a large pot, boil water and add whole spices (cloves, cardamoms, bay leaf, cinnamon). Stir in the soaked rice and cook until it’s 70% done. Drain and set aside.
Step 3: Prepare the Biryani Masala
Heat oil or ghee in a deep pan. Add cumin seeds and sliced onions, sauté until golden brown. Stir in ginger-garlic paste and cook for a minute. Add chopped tomatoes, turmeric, chili powder, coriander powder, and salt. Cook until the tomatoes turn soft.
Step 4: Cook the Chicken
Add the marinated chicken to the masala and cook until the chicken is tender and the oil separates from the gravy. Mix in chopped cilantro and mint leaves.
Step 5: Layer the Biryani
In a heavy-bottomed pot, spread a layer of cooked chicken masala, then top with a layer of rice. Repeat the layers. Drizzle saffron-infused milk over the rice and garnish with fried onions.
Step 6: Dum Cooking (Steaming)
Cover the pot with a tight lid and cook on low heat for 20-25 minutes. This allows the flavors to blend beautifully.
Step 7: Serve and Enjoy
Gently fluff the biryani and serve hot with raita, salad, or a side of spicy gravy. Enjoy the rich taste and aroma of this delicious homemade Chicken Biryani!
